Try our super delicious and healthy CARROT CAKE OVERNIGHT OATS! These overnight oats are like having dessert for breakfast with all the delicious flavours of carrot cake. Naturally sweetened with dates, less than 10 minutes effective effort, vegan, gluten-free, dairy-free and easy to make. Enjoy!

INGREDIENTS
Oatmeal:
1/2 cup oats (use gluten free oats for gluten free oatmeal)
1/2 cup milk of choice
1/2 tsp cinnamon
1/2 tsp vanilla extract
1 Tbsp milled flaxseed
6 chopped pecan nut halves (approx. 2 Tbsp)
2 Tbsp grated carrot
4 chopped dates
Topping:
2 Tbsp greek style coconut yoghurt
grated carrot
chopped pecan nut halves
cinnamon powder
INSTRUCTIONS
The Oatmeal:
Add all Oatmeal ingredients to a small bowl, and mix to combine.
Assembly:
Add the Oatmeal mix to the bottom of your jar (or another serving dish).
Cover and let it sit overnight in the fridge.
Next day add 2 Tbsp greek style coconut yoghurt to the top of the oatmeal.
Sprinkle with some grated carrot, pecan nuts and cinnamon and enjoy!
RECIPE NOTES
To make gluten free: Use gluten free oats.
To make dairy free: Use plant milk instead of cow's milk. Use plant yoghurt.
To make vegan: Use plant milk instead of cow's milk. Use plant yoghurt.
